Pinterest Stuff I Tried: Baked Eggs with Spinach & Feta

I love Pinterest! Admittedly, I don't have the time, bank account or skills to attempt some of the things I pin, but dammit, I vow to try some of them or what's the point, right?  Anywho, this is the first in a series called Pinterest Stuff I Tried.  I'm hoping this will inspire me to stretch myself creatively in all aspects of life, have a more varied and nutritious diet, and a more beautiful living and/or working environment.  I pinned this recipe for Green Shakshuka about 5 months ago and I decided since I had all some of the ingredients for it, I would give it a shot.  Here's the lowdown.

The original recipe is pretty straightforward if you want to make it based on the original.  I omitted all the good stuff the cream, wine, swiss chard, nutmeg, and spring onions and added smoked paprika because that's just how I roll.  I also cut the recipe in half because it was a trial and I wouldn't want to subject anyone else to my experimentation.

The results were spectacular!  This would make an awesome brunch dish. The spinach had a nice roasted flavor and the addition of the smoked paprika and feta made this quite a tasty dish even though I eliminated the cream and wine. Although I cut the recipe in half, it took longer to bake than I expected; about 20 minutes at 350. Maybe I should call this series Pinterest Stuff I Modified?

Baked Eggs with Spinach and Feta

4 cups of fresh spinach, chopped
1 tbsp olive oil
2 cloves garlic, minced
1/2 yellow onion, diced
salt and pepper to taste
2 eggs
1/4 tsp paprika
1/4 cup feta cheese

Preheat oven to 350.  In a skillet, add the olive oil, garlic, onion, and chopped spinach.  Add salt and pepper to taste.  Saute spinach mixture until wilted by half. Transfer spinach to a casserole dish. Create two wells in the spinach mixture for the eggs.  Crack an egg into each well, sprinkle with salt, pepper and paprika. crumble feta over entire dish.  Bake at 350 for approximately 20 mins or until egg whites are opaque.


Delicious Dishes: Gluten Free Quinoa Crust Pizza

I came across this recipe on The Wholesome Dish for a gluten free quinoa crust/bread. I modified it to my taste and the ingredients I had on hand and it was utterly delicious!

Below is the recipe with my adaptions.

1 cup quinoa (cooked)
3 tsp. olive oil, divided
1 cup water
2 large eggs
1 ½ tsp. garlic salt
½ tsp. dried rosemary
½ tsp. dried basil leaves
½ tsp baking powder
¼ cup shredded Parmesan cheese

Preheat oven to 425 degrees F. Line a baking sheet with parchment paper and spray with cooking spray.
In a small bowl, add the eggs, 1 tsp. olive oil, garlic salt, rosemary, basil, and baking powder. Whisk until well combined.
Add the cheese to the quinoa. Stir to combine. Add the egg mixture to the quinoa. Stir until well combined.
Spread the quinoa dough into a ¼ inch, even layer on the parchment paper. Bake for 18-20 minutes, edges should begin to brown.
Top with the pizza, or garlic bread, toppings and return to the oven for 5 minutes.
Let the pizza, or garlic bread, cool for 5 minutes before slicing.

I topped my pizza crust with cheese, yellow tomatoes and more parmesan cheese.
