The results were spectacular! This would make an awesome brunch dish. The spinach had a nice roasted flavor and the addition of the smoked paprika and feta made this quite a tasty dish even though I eliminated the cream and wine. Although I cut the recipe in half, it took longer to bake than I expected; about 20 minutes at 350. Maybe I should call this series Pinterest Stuff I Modified?
Baked Eggs with Spinach and Feta
4 cups of fresh spinach, chopped
1 tbsp olive oil
2 cloves garlic, minced
1/2 yellow onion, diced
salt and pepper to taste
2 eggs
1/4 tsp paprika
1/4 cup feta cheese
Preheat oven to 350. In a skillet, add the olive oil, garlic, onion, and chopped spinach. Add salt and pepper to taste. Saute spinach mixture until wilted by half. Transfer spinach to a casserole dish. Create two wells in the spinach mixture for the eggs. Crack an egg into each well, sprinkle with salt, pepper and paprika. crumble feta over entire dish. Bake at 350 for approximately 20 mins or until egg whites are opaque.
